1947年12月にレザンプレッシオン・ダール画廊で初めての個展を開くやいなや、ビュッフェは戦後フランス画壇の寵児となる。この作品が描かれた翌48年には「批評家賞（プリ・ド・ラ・クリティーク）」を受賞し、多くの批評家たちから賞賛の言葉をよせられたが、この時彼はまだ弱冠20歳であった。灰色と褐色という極端に切りつめた色彩と鋭く黒い線描によって作り出された、理想化を拒否した表現が、混乱した戦後社会の、不安と動揺に満ちた精神的な状況を象徴的に描き出すものとして圧倒的な支持を受けたのである。 この年にビュッフェは、本作品と同じモチーフを描いた静物画を多数制作している。しかし、例えばここにも描かれている干した鰊とコーヒーミルや、あるいは他の作品に見られる羽をむしられた若鶏、皮をはがされた兎など、およそ味覚をそそるといった感覚的快楽の刺激とは程とおいものであった。貧しく殺伐とした食卓を支配するのは、虚無感や悲惨さである。 しかしこのような彼の表現は、暗澹とした終戦直後の社会においては確かに時代の目撃者としてのアクチュアリティを持っていたにせよ、時の経過とともに衝撃力が失われ、類型化し、通俗化していくこととなった。（出典: 国立西洋美術館名作選. 東京, 国立西洋美術館, 2006. cat. no. 121）

Buffet was the miracle child of the post-war art world of Paris, bursting on the scene with his first one-man show held at the Librairie des Impressions d'Art in December 1947. This painting, created the following year, received the Prix de la Critique and was praised by many critics. At the time, Buffet was just 20 years old. The extremely limited palette, just ash tones and browns, combine with sharp black lines in an expressive form that rejects idealization. Buffet's symbolic depictions of the psychological state of post-war society, filled with unease and volatility, were overwhelmingly well-received. In that year, 1948, Buffet created this work and numerous other examples of still lifes with the same motifs. And yet, the dried herrings and coffee mill shown here, or the plucked chickens and skinned rabbits seen in other works, all stimulate the sensual pleasure of the sense of taste. The poverty ridden, brutally simple table setting is supported by a sense of nothingness, of misery. However, these works, with their direct expression of the bleak post-war world, had a sense of actuality for the viewers of their day. Conversely, as the years passed, his expression lost its impact and became more stylized, more conventional. (Source: Masterpieces of the National Museum of Western Art, Tokyo, 2009, cat. no.121)
